At Billesley Manor Hotel & Spa, we believe our guests deserve to start their dining experience strong. We offer two delicious starters that are perfect for those celebrating Veganuary month. The first is beetroot terrine, served alongside smoked feta cheese, pickled beetroot, beetroot gel and radish.  Guests can alternatively opt for our scorched honey-glazed pumpkin starter. This mouthwatering option comprises sides of butternut squash purée, pickled mushroom, seeds and truffle.

Veganuary month strives to showcase that vegan food doesn’t have to be boring. At Billesley Manor Hotel & Spa, we’ve ensured that our vegan dishes are worthy of the ‘main event’ status.  Our offering includes a cauliflower steak, served alongside raisin purée, pickled cauliflower, smoked almond crumb, coconut and curry oil. We also offer a tasty mushroom & chestnut Wellington, with mushroom à la grecque and thyme-infused velouté.

Curtain Call | Our Vegan Desserts

Why not finish your meal by indulging in one of our delectable desserts? We believe that no meal is truly complete without a sweet treat, so, we’ve created dishes that will end your dining experience on a high.  Guests can opt for our almond and chocolate brownie, served with aquafaba meringue, white chocolate crisp and raspberry sorbet.  If chocolate isn’t your thing, we’d recommend sampling our coconut cheesecake. We’ve accompanied this creamy concoction with a mix of spiced biscuit and winter berry compote which, combined, provides guests with the ultimate flavourful experience.
